Mofongo!

You can find mofongo - mashed plantains, seasoned and stuffed in a variety of ways in many Puerto Rican restaurants. It is served both as a main meal and a side dish, and often shaped in a tower or rolled into a ball. Mofongo is often stuffed with chicken, and other meat, and this starchy mash is enhanced with savory seasonings. Adding your own.
Ingredients:
3 green plantains or green bananas , 3 minced
garlic cloves, 1 pinch of adobo or salt, 1 tablespoon of olive oil
Procedure:
•- Peel and slice 3 green plantain. Add 3 minced garlic cloves and a dash of salt.
• In a deep fryer or frying pan heat vegetable oil to approximately 350 degrees(F) Fry plantains until firm, not hard-about 4 minutes. Remove and drain them from oil.
•Add minced garlic and olive oil
• In a mortar and pestle or food processor mash the plantains
• Form into small balls and serve as a side dish
